VINIFICATION.

The grapes are softly crushed and left in contact with the skins for about 6-7 hours, enough time to obtain the right shade of pink for the finished product. During the fermentation the temperature is maintained between 18-20 ºC.

AGEING.

Around 3 months in stainless steel tanks that contribute to enhancing the aromas and flavours. 

TASTING NOTES.

The colour is pinkish tending to cherry with underlined coral reflections, presents a delicate bouquet tending to fruity. The taste is dry, harmonious, on a pleasant bitterish background. This wine is also known as "wine night stand", because the must is in contact with the skins one night only, to extract the right flavor and the right shade of color. The winemakers gather around the tank to observe, to seize the right moment, unrepeatable, which gives it the identity it deserves. 

FOOD PAIRING.

It is ideal with Italian antipasti, pasta dishes in general, fish soups, baked fish, white meats.

You should serve at 12°C and you should open the bottle at the time of consumption.
